Whoopie Pies from Cake Mix


When our friends hosted a Christmas cookie exchange last month, you may remember me telling you that our friend Cindy totally pwned everyone by bringing two kinds of whoopie pies.  I was more than surprised when she said the recipe was just cake mix, 2 eggs and half a cup of oil.  Naturally, I wanted to try them myself, then pawn them off on the girls at my office because I don't want them staring me in the damn face every time I walk into the kitchen. 

I used dark chocolate fudge cake mix, added the eggs and oil, but though the mixture was still very dry. So, after perusing some other whoopie pie recipes, I added about 1/3 C water to make it a bit easier to handle.  I dolloped about 1 rounded tablespoon of batter onto cookie sheets lined with parchment paper* and popped them into a 350 oven.  The timing is the tricky part. The batter is spread so thin that you have to watch it very closely.  I took the baking time for mini-cupcakes and cut it in half, at about 15 minutes.  That was probably still a bit too long, as the cakes on the darker cookie sheet had a bit of a crunch to them.  Not the worst thing ever, but they were more like soft Oreos than full on whoopie pies.  So, I'd say about 10-12 minutes would be sufficient.  Mine were also a little on the thin side - not fat and fluffy like the ones I'd had at the cookie party.  I'm going to have to work on how to remedy this when I try again in spring with strawberry or lemon cake mix.  

You might be wondering how to make the filling.  Well, you could get all Martha and do it from scratch, but you can also half-ass it with the best of them.  I took a can of cream cheese frosting and mixed in about 1/3 C smooth peanut butter.  It was all I could do stop just eating it right out of the bowl and keep using it on the pies.  The cream cheese frosting would be aces on carrot cake or red velvet whoopie pies, too.  


*DO NOT even attempt this without parchment paper.  I know - it's $4 a roll, but you'll thank me later.

Product Review - Chocolate-Peanut Butter Bugles


Bugles have always been awesome. One of the fondest memories of my Grandpa (which all involve food, by the way) was when he'd bring a bag of Bugles home and place them on the ends of his fingers and eat them that way. I was pretty easily amused, and this was one of my favorite means of entertainment, aside from a trip to Woody's Grocery (which is another entry entirely).

Last week I was at Dot's Market and the cashier sneaked a bag out from under her register like it was contraband. It was a bag of Chocolate Peanut Butter Bugles and she said it they were the bee's knees. The manager walked by and confirmed that yes, I HAD to try them.
They're not overwhelming of either chocolate or peanut butter, really. The important thing is, they're delicious and will likely sassify a sweet & savory craving.

Mr. FvF's pork-tacular birthday, the second coming

Because our family is so awesome, you get to request pretty much anything you want for your birthday dinner. It's like getting your death row meal without the unfortunate outcome.
Everyone has very different tastes, so we've had a little bit of everything over the years - steaks, lasagna, BFD, fried chicken, cakes and pies. Basically, the FvF family has me to thank for bringing pies into the rotation. Though Ele, where we order our cakes from, does an excellent job, I think they're a bit overpriced and I don't even like cake that well. So, I started asking that Ma FvF make her absolutely mind-blowing banana cream pie w/chocolate chip cookie crust.

Mr. FvF got to have his family birthday dinner yesterday, and he asked that dad make smoked pork, and really didn't care about much else. The dinner was fantastic - pulled pork, potato salad, and baked beans.

In all honesty, though, it had a hell of a time standing up to the monster pies that mom had "whipped up" for dessert. For those of you not familiar with Southern vocabulary, when a woman says she "whipped something up," there's a good chance it took several hours and a lot of patience.

Crunchy Chicken w/Peanut Sauce

I've been trying in vain to make a decent peanut sauce for going on three years now, and this is the closest I've managed to get. It's still not spot on to Thai 9's sauce, but it'll do!

The set-up

For the chicken, you'll need:
1 cup corn flakes, crushed
1/2 cup flour
1 tsp paprika
1/8 tsp cayenne
1/4 tsp pepper
1/4 tsp salt

And for the sauce:
2/3 C creamy peanut butter
1/2 cup milk
1/2 cup plain yogurt
1 tbsp sugar
1 tbsp soy sauce
1/4 tsp cayenne

Cooking
Combine all of your dry ingredients in a zippy storage bag and toss the chicken chunks around in it, about half a dozen at a time. As you go, place them on a lightly greased backing sheet or glass dish, then spray all of the tops with cooking spray once they're all lined up. Pop them in the oven at 400 for about 25 minutes.

While they cook, assemble your sauce. Combine all of the ingredients in a
saucepan and whisk together until there are no lumps. Cook over medium heat until just before boiling, then reduce to low (the sauce will thicken). I tasted the sauce at this point and there just wasn't enough to it, so I added a little bit of store-bought peanut sauce that I picked up a while back that was WAY too damn hot for my taste, just on it's own. Turns out, it was the perfect compliment of seasonings to make this just right.
Turn off the heat & let is cool for a few before you put it into a serving dish.


Turned out pretty much perfect. The crunch of the cereal was so good that I think I'll try a different version of it with some thick cut pork loin chops I picked up today, which I have another sauce in mind for. The sauce was definitely more sweet than savory, but it complimented the chicken really nicely. It was also just pretty to look at.

Peanut Butter Cookies for Dummies

Last night while we watched the total fail-fest that was the 82nd Academy Awards, I developed a serious sweet tooth. Tonight is grocery night, so needless to say we had little in the house to work with. Then I looked in the cupboard and remembered that I nearly *always* have the makings of some delicious cookies at my fingertips, and I would be gratified in no more than 15 minutes.

Peanut Butter Cookies
1 cup creamy peanut butter
1 egg, beaten
1 tsp vanilla extract
1 cup white sugar

Combine all ingredients, form into 1" balls and place on an ungreased cookie sheet. The dough will be a smidge runny, so if that bothers you - stick it in the freezer for a few minutes to firm up. I'm warning you, though - that's just more time getting between you and warm, kick-ass cookies.
Fancy it up (pinkies out!) by pressing a fork over the dough balls until you have a lattice pattern. Bake for about 13 minutes at 350, let cool for 3-5 minutes, and enjoy the hell out of them. Yields about 16 cookies, which Mr. FvF quickly enjoyed a "gentleman's eight" of.
